Shrimp Scampi

Ingredients - Serves 4
3 Tblsp. unsalted butter
6 garlic cloves, minced
16 jumbo shrimp (about 1 1/2 pounds), peeled and deveined
Juice of 2 lemons
1/2 cup clam juice or broth
Dash of worcestershire sauce
1/2 tsp. paprika
1/4 cup seasoned bread crumbs
2 Tblsp. olive oil
Salt and freshly ground black pepper to taste

Preheat the broiler.
Heat the butter in an ovenproof skillet over low flame and saute the garlic until lightly golden, about 2 to 3 minutes. Add the shrimp and continue to cook for 1 to 2 minutes, or until the shrimp are coated with the garlic butter. Add the lemon juice, clam juice, and worcestershire sauce, and bring to a boil. Cover, reduce the heat to low, and simmer for 1 to 2 minutes.

Uncover the skillet, sprinkle the shrimp with the paprika, and place under the broiler for 5 to 6 minutes, or until the shrimp are lightly browned and cooked through. Remove the skillet, top the mixture with the bread crumbs, drizzle with the oil, and return to the broiler for 2 minutes, or until the bread crumbs are lightly browned.
