Mango Mousse
Courtesy of Kris Rudolph, From Mexican Light
This refreshing dessert has no added sugar, just the natural sweetness of the mangoes. It's a great choice for diabetics and for those who would like to keep their food, even their sweets, as natural as possible.
44 oz. Servings
2 ripe mangoes, chopped
2 tsp. Lime juice
1/4 tsp. Nutmeg
1/4 tsp. Cinnamon
1/2 cup Whipping cream
1/2 tsp. Vanilla
Place the mangoes, lime juice, nutmeg and cinnamon in a food processor. Puree using the pulse button, so the mixture remains chunky.
In a large bowl, beat the whipping cream and vanilla to soft peaks. Gently fold into the mango puree. Spoon into individual dishes. Serve immediately or refrigerate.
Low Carb Option
Substitute some lower carb berries, such as strawberries, blueberries or blackberries for the mangoes.
Low Fat Option
Replace the whipping cream with vanilla yogurt.
