Lime Cilantro Vinaigrette

The delicate floral flavor of lime makes this dressing perfect for lettuce or cucumber salads. The vinaigrette also makes a delicious baste for grilled shrimp or fish.
1 tsp. lime zest
2 TBLSP fresh lime juice (about 1 lime)
1 tsp. White balsamic vinegar
5 TBLSP canola or grapeseed oil
2 TBLSP finely chopped fresh cilantro
2 TBLSP chopped fresh chives
Salt
Combine the lime zest and juice and vinegar in a small bowl. Whisk in the oil until completely blended. Stir in the cilantro and chives. Season with salt. Use immediately.
