Gingerbread

Ingredients

2 1/2 cups sugar
3/4 tsp salt
2 1/2 tsp ginger
1 1/2 tsp cinnamon
1 1/2 tsp ground cloves
2 1/2 cups Peanut oil
2 1/2 cups molasses
5 tsp baking soda
2 1/2 cups boiling water
6 1/4 cups cups A.P. flour
5 eggs beaten
butter for pans

Directions

Butter 1 deep pan (approx 13 x 9 x 4)Combine sugar, salt, ginger, cinnamon and cloves
-Stir in peanut oil, mix well. In same cup, measure and stir in molasses and mix well
-Boil water, add baking soda to water and immediately stir into mix
-blend in flour in 3 steps, mixing well after each addition
-mix in eggs
-pour into prepared pan, leave some room at top
-bake uncovered at 350 for 55 minutes or until passes clean toothpick test
