Caramel Sauce

Ingredients

1 lb unsalted butter
4 cups white granulated sugar
3 cups heavy cream

Directions

-melt butter softly in tall heavy bottom saucepan
-when melted add sugar, cook over medium heat stirring frequently
-continue until golden brown "caramel color"
-slowly add cream, whisking carefully until incorporated. (careful during this stage as the hot caramel will bubble up and pop and splatter slightly)
